London Sparkling 2016 - Blanc de Noirs (Suffolk): The One. The Only. The Cream of The Cream. The only vintage English sparkling wine fully made in London. Words can't describe the incrediblness of this wine. Only 800 bottles ever made and only 35 left (as at 7th December 2021). Suffolk grown Pinot Noir and Pinot Meunier, pressed in a wooden basket press, fermented using wild yeasts in French oak, aged on lees in the bottle in the crypt of Christ Church Spitalfields (The tall, amazing Hawksmoor one) before being riddled and disgorged by hand. Only 5g/L added at dosage stage. Corked and caged by hand. This was a massive labour of love. The 2017/18/19 versions are still in bottle and will be for a while......

Crystal - 2022 Croatina Nat Fizz (Lombardi) - A Naturally Fizzy style of sparkling wine (unlike Champagne, Prosecco, Cava and Crémant) which undergoes the first and only fermentation in the bottle. No added anything. No sulphur, no yeast, no fining, no filtration, no nothing. Just grapes. Fruity, dry, wild strawberry and a touch of raspberry.

Amy - 2021 Barrel Fermented Chardonnay (Lombardi) - Half the grapes were whole bunch pressed and wild fermented in old oak ex Burgundy (90%) and new French oak barrels (10%). The other half was then de-stemmed by hand and fermented on the skins. Barrel aged for 7 months and went through full malolactic fermentation. A lean minerality backed up with some lovely mouthfeel, the oak elevates and doesn’t overpower. One for those who like the classics but appreciate things move with the times.

Araceli - 2021 Pinot Grigio Ramato - Skin Contact Pink (Pfalz) - This is one of the most interesting and unusual wines we've made (so far!). She'll be divisive for sure. It's Pinot Grigio from the Pfalz, Germany, but not as you know it. Why is this wine, ‘Araceli’ a strange colour? We ferment it fully on the skins for 2 weeks, so the pinky golden skins colour the wine and make it go 'ramato' or 'copper' as the Italians call it. It's essentially a red wine but made from pink grapes (rather that red grapes). So what is it like? It is a really complex, unusual wine that has notes of white pepper, cherry, vanilla, cloves, and a real wild strawberry-ness when it starts to open up. She's got a lightly tannic yet soft structure but is really well rounded and changes constantly as you drink her.

Gary - 2021 Pinot Noir (Lombardy) - The grapes were destemmed by hand and fermented spontaneously in a stainless steel tank, without the addition of any yeast - otherwise known as wild fermentation. No additions of sugar, nutrients, or de-acidification methods/any other winemaking was used to make this wine. After 20 days on the skins the wine was pressed of and aged in old French barrels (90%) and new American (10%) for 8 months, where it underwent full malolactic fermentation. No filtration , no fining, and only minimal SO2 was added prior to bottling. A beautiful light/med bodied red with soft tannins, lots of red fruit (wild strawberries, cherries) and some floral notes.

Courtney - 2021 Nero Di Troia (Puglia) - Often this grape is made into a bold, tannic and almost dried grape/Amarone style, however, this is nothing like that. This was picked slightly earlier to lock in a slightly lighter, fresher and more aromatic style. It’s a very interesting wine with a spicy, unusual nose. Cardamom and palma violets and has similarities in terms of style to Pinot Noir.
