So, Kyra is a clean, fresh, Sauvignon Blanc. If you drank 'Michael' from our 2018 vintage, this Sauvignon is from harvested the same vineyard in Blaye, Bordeaux. It is not called Michael again for one main reason. The winemaking is different. The yeast strain used to ferment this wine has changed. This is one of the few wines, we add a yeast to the freshly pressed juice. Most of our wines use naturally present yeasts (think sourdough). With this wine, however, we wanted a clean, crisp, innovative style of Sauvignon so we used a yeast developed in South Africa in collaboration with an Australian University. We wanted to add a touch of New World to brilliant Old-World grapes.
It is a hard wine to place style wise. It is a little like a Sancerre, but with an element of South African/NZ Sauvignon added to the mix. Not crazy tropical, but not as subtle as many French styles. My mum thinks it is the nicest wine we have made to date. It is one of our slightly more classic, universally likeable wines. Hard to find a hater for this one. Not very divisive.
Fermented in temperature controlled stainless streel tanks. Minimum added sulphur, filtered, no fining. No oak.
Kyra is 29 (as at the 2019 vintage), she is from Filipino origins but grew up in Hong Kong. She now lives in Hackney and works for a record label. You may spot her wandering the streets of East London eating and drinking her way around town!
If anyone cares, this wine, like all our wines, is vegan friendly. This does not mean they wave to vegans in the street, they are just made without the use of any animal based winemaking products.
