This is an exclusive wine release prompted by the imact of COVID-19 on our business and the wider hospitality industry. We hadn't planned to do this, we've just decided to do this on a whim! 


So, what is this all about?!?!


The plan with this wine was to riddle and disgorge it (take the sediment out left from the fermentation in botte to make it go fizzy) in the next month and release it to the world as a labelled, finished, wine at £26 a bottle. Complete with the face of one of our customers on, just like our others.


We may still do that, but we'll have to see how many people buy it like this first. We only made 1,000 bottles of this wine. 


This is our 2019 Sparkling Grenache (red sparkling for the avoidance of any doubt). It's made from grapes grown in Valencia, Spain. The grapes were hand harvested and brought back to our winery in London in refrigerated trucks. There, we destemmed the grapes (took them off the stalks) by hand (we rub them over a metal mesh) and left the grapes to ferment into a fresh style of still red wine, with a medium high level of natural acidity.  When we tasted the finished wine, we decided that it would make a brilliant sparkling. Most red wines don't as the combination of acidity, fruit and sructure are generally not balanced for a sparkling, but this wine was different. The grapes had been picked a little early to retain freshness and acidity and these things made it ideal for a fizz. 


This wine will come to you without any formal, fancy label. It will have all the necessary legal details on though. Things like alcohol level, allergens, lot number and other bits. It won't have a lovely label like our other wines though. 


What is the wine like?


It's fresh and fruity but dry. It's medium bodied and has raspberries and blackcurrants on the nose. It is soft and has gentle tannins, a long tasty finish and is a really approachable style of sparkling red. This is nothing like Lambrusco and has had no additions of sugar to make it sweet. It has fermented in bottle and has gone dry. We opened some last week and we decided, even when if we do riddle and disgorge ourselves, we wouldn't be adding any sugar into the final 'dosage' (the added sugar and wine at the end). 


So, what happens when you buy this wine?


You'll have to riddle and disgorge it yourself, at home. You don't need to be a wine professional to do this, but be prepared that you may get a little dirty, you may get sprayed a bit, you may lose a little of this wine in the process but you'll have some fun. Ideally do this outside. Do not do this in your flat or house!


We will provide details in the package of how you should prepare the wine before disgorging it, and we'll also be doing some online live and saved videos of how you should prepare and open the wine. 


We'll do our best to make it clear how this should be done. Please be aware that if you muck it up, and lose half the bottle, we can not be held responsible for the losses, the stains of red wine anywhere or the laughs of your friends and family! Also, do this safely. Don't point the bottle at someone!
